How delicious cake muffins quick and easy coffee
If you love coffee cake in the morning, but it is not so fast wanted to take the trouble to cut a piece of cake, smear a knife, fork and dish, try this recipe for delicious coffee cake muffins. They are quick and easy to do. If mornings are busy week, make these muffins on Sunday evening, and they are ready to be taken Monday through Friday. MUFFINS coffee cake
1 1 / 2 cups all-purpose flour
1 cup sugar, divided
1 1 / 2 c. teaspoon baking powder
1 / 2 teaspoon salt
1 / 4 c. teaspoon nutmeg
1 egg beaten
3 / 4 cup milk
1 / 3 cup butter softened
1 teaspoon cinnamon
1 / 3 cup melted butter
Preheat oven to 350 degrees. Grease a muffin 12 to one side.
In a medium bowl, combine flour, 1 / 2 cup sugar, baking powder, salt and nutmeg. Beat eggs and milk in small bowl. Beat butter at room temperature in a large bowl until light and fluffy. Add flour mixture and egg mixture alternately with butter, stirring with a wooden spoon after each addition. Do not overmix! Pour the batter into the muffin pan, filling each cup about 2 / 3 full. Bake at 350 degrees for about 15 minutes or until a toothpick inserted in center comes out own.
Mix remaining sugar and cinnamon in small bowl. Remove the muffin pan and dip the top of muffins in melted butter then in the mixture sugar and cinnamon. Place upside down on rack. Can be served hot or cold.
